Here is a non-traditional salsa that easy to make, is a healthy raw food, and is delicious:
A bunch of carrots (about a pound), shreaded
One onion (you can use any color, or try green onion), diced
Cup of cilantro, chopped
4 garlic cloves, minced
Two big or four small tomatoes, or a 2 cups of cherry tomatoes, diced
1/2 cup of lime juice
salt to taste
A little cumin, if you like
Mix everything together and let sit in the fridge for an hour or up to 12. Serve like you would a regular salsa or as a side with morroccan lamb.
Variations: add shredded zucchini or fresh corn, pineapple or papaya, red peppers or chili peppers….
